Sometimes you just have the craving. I get it

In fact, I crave noodles all the time and luckily there is so much on the market right now that offers healthier alternatives to regular white flour pasta.

Some of my favourites include: these red lentil noodles that I use in any classic Italian dish or these rice noodles used in this recipe in my Healthy Pad Thai!

I love a good Pad Thai take-out, so I decided to recreate it with a healthier twist at home. I used gluten free noodles, no added sugars, preservatives, or any other crap you don’t need!

I hope you enjoy it :)

Ingredients:

(Around 4 servings)

  • 1 pack of rice noodles

  • 1 tbsp virgin olive oil

  • 3 cups of green or purple cabbage-shredded (I usually buy it pre-shreded to save time)

  • 4 tbsp coconut aminos or Tamari (you can also use low sodium soy sauce if you don’t have the other two)

  • 1.5 tbsp fresh lime juice

  • 1.5 maple syrup/or honey

  • 1 tbsp hot sauce of choice

  • 1 carrot shredded

  • 3 green onions- chopped

  • 1 cup of bean sprouts

  • 1 cup cilantro

  • 1/4 chopped roasted unsalted peanuts

  • Optional: Add any protein you like such as shrimp, chicken, tofu, etc

The steps:

  1. Boil the noodles according to the time indicated on the box. (Make sure to not overcook, strain them when they’re ready and rinse with cold water so it’s stops the cooking process)

  2. While noodles are cooking use a medium sized sauce pan (preferably a wok if you have one), heat the olive oil, and add in the cabbage, let it cook for 8 minutes.

  3. While cooking, combine: tamari, maple syrup, hot sauce.

  4. Add the sauce & cooked noodles into pan,

  5. Add shredded carrots & green onions; stir for about 2-3 min,

  6. Add the cilantro, chopped peanuts and bean sprouts!!

  7. Add protein of choice (optional) stir and ENJOY!
